  • 2 pounds baby potatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the baby potatoes in a large pot of salted water over medium-high heat until fork-tender (about 15-20 minutes). Drain and let cool.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
  3. In a large mixing bowl, combine cooled potatoes with red onion and cherry tomatoes. Pour the dressing over and gently toss to coat.
  4. Fold in parsley and basil. Adjust seasoning if necessary.
  5. Serve warm or chilled after letting it sit for at least 30 minutes.
