- 2 pounds baby potatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
- Cook the baby potatoes in a large pot of salted water over medium-high heat until fork-tender (about 15-20 minutes). Drain and let cool.
- In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
- In a large mixing bowl, combine cooled potatoes with red onion and cherry tomatoes. Pour the dressing over and gently toss to coat.
