- 1 fish fillet (any white fish like tilapia or cod)
- 2 cups cherry tomatoes
- ¼ cup olives
- 2 sprigs parsley (fresh)
- 2 sprigs thyme (fresh)
- 3 garlic cloves (minced or diced)
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp Cajun seasoning (old bay or creole seasoning)
- ½ tsp chili flakes
- 1 tsp fish seasoning (optional)
- ½ tsp salt
- ½ tsp black pepper
- 3 tbsp cooking oil
- 2 tbsp water
- 3 tbsp salted butter
- Pinch of salt and pepper
- Preheat your oven to 400°F (200°C).
- Mix seasonings in a bowl and rub onto both sides of the fish fillet.
- Heat oil in a pan over medium heat; sear the fish for 1 minute on each side until charred.
- Remove fish; sauté tomatoes, olives, garlic, herbs, seasoning mix, and water in the same pan for 3 minutes.
- Place seared fish back into the pan with sautéed mixture; add butter on top and transfer to oven.
- Bake for about 10 minutes until cooked through.
- Serve immediately with lemon wedges and your choice of sides.
