Ingredients

  • 1 fish fillet (any white fish like tilapia or cod)
  • 2 cups cherry tomatoes
  • ¼ cup olives
  • 2 sprigs parsley (fresh)
  • 2 sprigs thyme (fresh)
  • 3 garlic cloves (minced or diced)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp Cajun seasoning (old bay or creole seasoning)
  • ½ tsp chili flakes
  • 1 tsp fish seasoning (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 tbsp cooking oil
  • 2 tbsp water
  • 3 tbsp salted butter
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix seasonings in a bowl and rub onto both sides of the fish fillet.
  3. Heat oil in a pan over medium heat; sear the fish for 1 minute on each side until charred.
  4. Remove fish; sauté tomatoes, olives, garlic, herbs, seasoning mix, and water in the same pan for 3 minutes.
  5. Place seared fish back into the pan with sautéed mixture; add butter on top and transfer to oven.
  6. Bake for about 10 minutes until cooked through.
  7. Serve immediately with lemon wedges and your choice of sides.
