  • 4 cups broccoli florets
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 8 oz brick of feta cheese (sheep's milk or goat's milk)
  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp fresh chopped basil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss the broccoli florets with olive oil, salt, and pepper.
  3. Create space in the center of the broccoli and place the block of feta there. Drizzle with additional olive oil and sprinkle with pepper.
  4. Roast for about 35 minutes until the broccoli is tender and slightly crispy.
  5. Meanwhile, cook the pasta according to package directions until al dente; reserve half a cup of starchy water before draining.
  6. Combine the roasted broccoli and feta in the baking dish, stirring gently to break up the feta.
  7. Add cooked pasta and reserved starchy water gradually until you reach your desired creaminess.
  8. Mix in lemon juice, zest, and basil before serving.
