  • 12 large eggs
  • 2 ripe avocados (pitted)
  • 3 tablespoons lime juice
  • 2 cloves garlic (minced)
  • 1/2 jalapeño (deseeded and minced)
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro (finely chopped)

Instructions

  1. Hard boil the eggs by covering them with water in a saucepan. Bring to a boil, then remove from heat and cover. Let sit for 18 minutes. Transfer to an ice bath to cool.
  2. Once cooled, cut each egg in half lengthwise and remove yolks into a food processor. Add avocados, lime juice, garlic, jalapeño, cayenne pepper, and salt. Blend until smooth.
  3. Stir in cilantro and taste; adjust seasoning if needed. Fill egg whites with the avocado mixture using a spoon or piping bag.
  4. Garnish with additional cilantro or cayenne pepper before serving.
