  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
  2. In another bowl, toss Brussels sprouts with olive oil, salt, and pepper. Roast until golden brown.
  3. Boil salted water in a large pot; cook bow tie pasta until al dente. Reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced sausage until browned and set aside.
  5. In the same skillet, sauté garlic until fragrant; add butter and stir in drained pasta along with seasonings.
  6. Combine roasted veggies and sausage into the skillet; mix well.
