  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium-high heat, heat olive oil and sear beef cubes until browned on all sides. Remove from pot.
  2. Sauté diced onion and minced garlic in the same pot for about 3-4 minutes until translucent.
  3. Stir in tomato paste; cook for another minute.
  4. Deglaze the pot with a small amount of beef broth.
  5. Return beef to the pot with remaining broth and add carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, salt, pepper, and add the bay leaf.
  7. Bring to a boil; reduce heat to low and simmer covered for about 2 hours or until beef is tender.
  8. Adjust seasoning before serving; remove bay leaf and garnish with fresh parsley.
