Ingredients

  • 34 lbs organic chicken, skin removed
  • 23 tbsp Jamaican green seasoning
  • 2 tbsp Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup organic chicken stock (low-sodium)
  • 2 medium russet potatoes, peeled + cubed
  • 2 medium carrots, peeled + chopped
  • 13 scotch bonnet peppers
  • 4 tbsp extra virgin olive oil
  • Fresh thyme sprigs

Instructions

  1. Marinate chicken pieces in Jamaican green seasoning, curry powder, garlic, and ginger for at least 30 minutes.
  2. In a large pot, heat olive oil over medium-high heat; sauté garlic and ginger until fragrant.
  3. Add marinated chicken to the pot; sear until golden brown on both sides.
  4. Remove chicken; add potatoes, carrots, bell pepper, spices, coconut milk, and stock to the pot. Mix well.
  5. Return seared chicken to the pot; simmer covered for about 30 minutes until cooked through.
  6. Adjust seasoning as needed before serving hot over rice.
