- 3–4 lbs organic chicken, skin removed
- 2–3 tbsp Jamaican green seasoning
- 2 tbsp Jamaican curry powder
- 1 can (14 oz) full-fat coconut milk
- 1 cup organic chicken stock (low-sodium)
- 2 medium russet potatoes, peeled + cubed
- 2 medium carrots, peeled + chopped
- 1–3 scotch bonnet peppers
- 4 tbsp extra virgin olive oil
- Fresh thyme sprigs
- Marinate chicken pieces in Jamaican green seasoning, curry powder, garlic, and ginger for at least 30 minutes.
- In a large pot, heat olive oil over medium-high heat; sauté garlic and ginger until fragrant.
- Add marinated chicken to the pot; sear until golden brown on both sides.
- Remove chicken; add potatoes, carrots, bell pepper, spices, coconut milk, and stock to the pot. Mix well.
- Return seared chicken to the pot; simmer covered for about 30 minutes until cooked through.
- Adjust seasoning as needed before serving hot over rice.
