  • 2 English cucumbers, thinly sliced
  • 1 medium carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 2 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1/2 tsp apple cider vinegar
  • 1 tbsp sesame seeds

Instructions

  1. Wash cucumbers under cool water and slice them thinly.
  2. Grate the carrot and slice the red onion thinly.
  3. In a separate bowl, whisk together coconut aminos, sesame oil, apple cider vinegar, ginger, and minced garlic until well blended.
  4. Combine all vegetables in a large mixing bowl and pour the dressing over them.
