  • 2 jars (12-14 oz each) artichoke hearts (quartered and marinated)
  • 34 ounces arugula
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (thinly sliced)
  • ½ cup black olives
  • ¼ cup plant-based cheese (optional)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons vinegar (white grape juice vinegar recommended)
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Arrange arugula on a large serving platter or salad bowl.
  2. Drain the artichoke hearts and add them on top of the arugula.
  3. Add halved cherry tomatoes, black olives, and sliced red onion.
  4. In a small jar or bowl, combine all dressing ingredients and shake or whisk until blended.
  5. Drizzle half of the dressing over the salad before serving and serve remaining dressing on the side.
