  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced
  • 4 tsp kosher salt
  • Freshly ground black or white pepper
  • 10 cups water
  • 8 oz dried ramen noodles
  • 1 cup carrot, cut into matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. Season chicken thighs with salt and pepper. Heat oil in a large pot over medium heat and brown the chicken on both sides.
  2. Remove chicken and sauté garlic, ginger, and white parts of scallions for about 2 minutes until fragrant.
  3. Add water, black rice vinegar, and soy sauce; bring to a boil. Return chicken to the pot and simmer for about 15 minutes until cooked through.
  4. Remove chicken; shred it using forks. Stir in ramen noodles and carrots; cook according to package instructions until tender (about 4-5 minutes).
  5. Return shredded chicken to the pot with green scallions. Stir in toasted sesame oil before serving hot.
