  • 1 1/2 cups butter, at room temperature
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated white sugar
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups apricot jam
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9×13 inch pan.
  2. In a large bowl, mix room temperature butter with light brown and granulated sugars until creamy. Add vanilla and salt, then gradually incorporate flour to form a smooth dough. Divide the dough into two halves.
  3. Press one half of the dough evenly into the prepared pan and bake for about 20 minutes or until lightly golden.
  4. Spread apricot jam over the baked crust while it’s still warm. Crumble the remaining dough on top of the jam filling.
  5. Return to the oven and bake for an additional 30 minutes until golden brown. Allow to cool completely before slicing.
