  • 150 g granulated sugar
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (dairy or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and thinly slice the apples. Toss them with sugar, salt, and cornstarch in a bowl. Let sit to absorb flavors.
  3. Cook the apple mixture in a skillet over medium heat for 20-30 minutes until softened and caramelized.
  4. In a separate saucepan, whisk egg yolks, cornstarch, milk, sugar, salt, and vanilla bean paste. Heat while stirring until thickened into custard.
  5. In a mold, layer the cooked apples and custard alternately until finished with custard on top. Chill in the fridge for at least one hour before serving.
