  • 30 g light brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 1 tsp cornflour (cornstarch)
  • 10 g unsalted butter
  • 8 g light brown sugar (for crumble)
  • 17 g plain flour (for crumble)
  • 1/8 tsp cinnamon (for crumble)
  • 175 g unsalted butter (softened)
  • 175 g light brown sugar (for cupcakes)
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (for buttercream)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling and chopping apples, then simmering them with light brown sugar, cornflour, cinnamon, and mixed spice for about 10-15 minutes until soft. Cool completely.
  2. Create the crumble topping by mixing plain flour, light brown sugar, and cinnamon with butter until crumbly; bake at 180C for 10-15 minutes.
  3. For the cupcakes, cream softened butter and light brown sugar together, then add eggs one at a time. Fold in flour and spices before baking at 160C for 20-25 minutes.
  4. Once cooled, core the cupcakes and fill them with apple mixture. Prepare buttercream by mixing softened butter with icing sugar and cinnamon; pipe onto cupcakes.
  5. Top each cupcake with remaining apple filling and sprinkle crumble.
