  • ⅓ cup packed brown sugar (for streusel)
  • ¼ cup old-fashioned oats (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed for streusel)
  • 8 oz cream cheese (softened for frosting)
  • ¼ cup unsalted butter (softened for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix flour, brown sugar, oats, cinnamon, and salt for the streusel topping. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and granulated sugar until fluffy. Add eggs one at a time followed by vanilla.
  5. Gradually mix dry ingredients into the wet mixture alternating with milk until just combined; fold in diced apples.
