  • 2 1/2 cups Graham cracker crumbs
  • 1/8 cup Brown sugar (packed light or dark)
  • 10 TBSP Unsalted butter (melted)
  • 2 cups Apple cider (reduced down to 1/2 cup)
  • 24 oz Cream cheese (room temperature)
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 1/4 cup Brown sugar (packed light or dark)
  • 1/3 cup All-purpose flour
  • 1/4 tsp Ground cinnamon
  • 1 TBSP Melted butter
  • 1 TBSP Apple Cider
  • 1/2 cup White granulated sugar
  • 2 tsp Ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and brown sugar with melted butter. Press into the bottom of a springform pan to form the crust.
  3. In a saucepan over medium heat, simmer apple cider until reduced to about half a cup.
  4. In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time until fully combined. Stir in reduced apple cider.
  5. Pour filling over the crust and bake for about 50 minutes or until slightly jiggly in the center.
  6. Prepare the cinnamon topping by mixing brown sugar, flour, and cinnamon; drizzle melted butter and apple cider until crumbly. Sprinkle on top of the cheesecake and return to oven for another 15 minutes.
  7. Let cool at room temperature before refrigerating for at least four hours or overnight.
