  • 1 shallot, diced
  • 2 inches fresh ginger, peeled and grated
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup coconut aminos
  • 4 cups cauliflower rice
  • 6 cups greens of choice, chopped (romaine, arugula, spinach, etc.)
  • 1/4 cup mayo
  • 1 tablespoon hot sauce
  • Chopped green onions
  • Sliced avocado

Instructions

  1. Prepare cauliflower rice if using it; otherwise, cook your preferred rice.
  2. Dice the shallot and grate the ginger.
  3. In a skillet over medium-high heat, add toasted sesame oil and ground beef; cook until browned.
  4. Incorporate shallot, ginger, garlic powder, onion powder, and red pepper flakes; cook for about 8 minutes.
  5. Stir in coconut aminos; simmer for an additional 3-4 minutes.
  6. Serve over greens or cauliflower rice, optionally topped with mayo mixed with hot sauce and garnished with green onions and avocado.
